Lamb Chops With Grilled Vegetables
Ingredients
4 chop(s) raw lean lamb loin chop (42 g each)
2 tsp. lemon juice
1 tsp. oregano, ground
1 tsp. garlic, minced
½ cup cooked brown basmati rice
½ cup raw sweet red pepper, slices
½ cup raw zucchini, sliced
1/3 cup red onion, sliced
1 tsp. extra-virgin olive oil (MGC recommends Barrie Olive Oil Co.)
Instructions
Grill the red pepper, zucchini and red onion and set aside. In a bowl combine the olive oil, minced garlic, and oregano and lemon juice. Remove all visible fat from the lamb chops. Baste or marinate the lamb chops with the olive oil mixture and grill until desired doneness. Serve the grilled vegetables with the lamb chops over brown rice.
